The Hasselt seitan company Maya and the Jessenhofke brewery worked together on this experiment. The barley was partly replaced by the starchy residual product from the seitan maker. The result is a light blond sparkling beer with a sweet and sour undertone despite its high bitterness.

This beer is brewed in Jessenhofke's own facilities.
