Brewer - owner Luc Vermeersch has a great interest in traditional crafts. It is therefore not surprising that he installed a bread oven and small brewery in his garden house at the time. He bought the 30-liter mini-brewery in Finland in 1997. He received exactly one weekend of training from the manufacturer. His brewing knowledge and interest grew through a lot of self-study and making countless small test brews. After 10 years of brewing, he enrolled for a brewing course. During the course year he made plans for a larger brewery and started buying parts of the installation here and there. In April 2008, the De Leite brewery became a reality.

The first brewing installation was there before the amateur brewer had completed his brewing course. She entered Helbig's building, where the brewer was also manager. The brewery could then brew 500 liters of beer at a time. They had an 800 liter brewing kettle, hot water tank and a 650 liter yeast and lager tank. On one brewing day, brewing took place twice, once or twice a month for three years. Because the demand for the beers continued to rise, the brewery was expanded in December 2011.

In 2011, the brewer was able to make another dream come true. He brought 14 'barieken' (wooden wine barrels of 220L) from winegrower friends in the Medoc region (France). The love for sour beers could finally be translated into a series of 'cuvée beers' in the own brewery. In the meantime, the brewery already has 105 'barracks' and eight wooden foeders ranging from 4,000 to 5,000 liters.
